Preparation:
  1. Cut cauliflower into small thumb-size pieces.
  2. Gather three trays, place the flour on one and season well with salt and pepper or your preferred spices.
  3. In the second tray whisk the eggs well and set aside (for a vegan option, mix cornflour and water to form a light batter).
  4. Place cornflakes in a food processor and blend into a fine, coarse crumb. Transfer to the third tray.
  5. Take the cauliflower pieces and coat them in flour. Shake off excess.
  6. Transfer to the egg mix and coat well. Drain excess.
  7. Place small amounts at a time into the cornflake mix. Using dry hands, coat well and transfer to a tray to store or onto a Merrychef cooking tray and cook using the oven profile for cauliflower.
  8. Before cooking, lightly spray the cauliflower with vegetable oil.
  9. Place the sesame oil, sesame seeds, honey, soy sauce, lime juice, and chill paste in a small Signature bowl to make the chilli sauce. Mix and cook using the oven profile for chilli sauce.
  10. Heat the pre-cooked rice using the oven profile for cooked chilled rice.
  11. Once the cauliflower is cooked, toss it in with the chilli sauce, place it onto a bed of rice, and garnish with chillies, sesame seeds and spring onions.
