Ingredients:
5 g 0.18 oz/wt Garlic
5 g 0.18 oz/wt Green Shallots
3 g 0.11 oz/wt Red chilli
10 g 0.34 oz/fl Oil
100 g 3.53 oz/wt Chinese Hard-Shell Clam
10 g 0.35 oz/wt Butter
35 ml 1.18 oz/fl Sake
10 ml 0.34 oz/fl Soy Sauce
5 g 0.18 oz/wt Dry chilli
10 g 0.35 oz/wt Leek
5 g 0.18 oz/wt Garlic
5 g 0.18 oz/wt Green Shallots
3 g 0.11 oz/wt Red chilli
10 g 0.34 oz/fl Oil
100 g 3.53 oz/wt Chinese Hard-Shell Clam
10 g 0.35 oz/wt Butter
35 ml 1.18 oz/fl Sake
10 ml 0.34 oz/fl Soy Sauce
5 g 0.18 oz/wt Dry chilli
10 g 0.35 oz/wt Leek
Preparation:
  1. Cut the garlic, green shallots and red chilli in fine slices.
  2. Wash the clams.
  3. Cut the dried chilli and leek into fine strips and keep aside for garnish.
  4. Put the garlic, shallots and red chilli in the bowl and put the lid on.
  5. Cook as per oven profile.
  6. Carefully remove the bowl with the cooked food and let the clams rest for 3 minutes. Garnish with the dried chilli and the leek strips.

  6. Carefully remove the bowl with the cooked food and let the clams rest for 3 minutes. Garnish with the dried chilli and the leek strips.
Tips:
  1. For more colour (browning), increase the fan speed. If you are already at 100% - increase the time, and decrease the microwave.
  2. To make the food hotter, increase internal temperature by adjusting the microwave power. If you are already at 100% - increase the time, and decrease the fan power.
